Starbucks Launches Coco Matcha and Coco Cold Brew with Coconut Water Twist

Starbucks is closing out summer with two refreshing new drinks: the Coco Matcha and Coco Cold Brew. Both are built on coconut water and topped with layers of cold foam, and they’re rolling out in select cities starting Thursday, August 21.

A Coconut-Infused Refresh

The Coco Matcha pairs chilled coconut water with a topping of unsweetened Matcha Cold Foam, which Starbucks beverage developer Patrick Penny describes as tasting like “a tropical escape in a cup.”

The Coco Cold Brew follows the same coconut-water base but adds a cold brew foam with rich chocolaty notes, balancing smooth coffee with a lighter, hydrating finish.

Both drinks reflect Starbucks’ current focus on health-forward innovation, highlighting lighter textures, functional ingredients, and less sugar than traditional Frappuccinos or flavored lattes.

Where You Can Try Them

The new beverages won’t be everywhere just yet. Starbucks is rolling them out in select U.S. cities, including:

  • New York City
  • Greater Los Angeles
  • Chicago
  • Cedar Rapids, Iowa
  • St. Louis, Missouri
  • Springfield, Illinois
  • South Bend, Indiana
  • Madison and Milwaukee, Wisconsin

The drinks were first tested in New York City in July as part of Starbucks’ “Starting 5” program, a small-scale launch system where new concepts debut in just five stores to gauge customer and barista feedback before a wider rollout.

A Summer of Cold Foam

Starbucks has been leaning heavily into layered cold foam creations this year. Earlier in July, the brand introduced its Strato Frappuccinos, available in Brown Sugar, Strawberry Matcha, and Salted Cream Mocha flavors—each designed with a light cold foam topping instead of the classic whipped cream.

Other seasonal standouts included the one-week-only Firework Frappuccino, featuring berry flavors and popping pearls, as well as the comeback of Starbucks’ Raspberry Syrup, which returned alongside the new Raspberry Cream Cold Brew in late July.

The coconut-inspired duo is also a preview of Starbucks’ broader wellness-oriented menu strategy. The company has announced that protein cold foam will be introduced this fall, signaling continued experimentation with functional upgrades to classic drinks.

And for fans counting down, Starbucks confirmed its signature Pumpkin Spice Latte returns on August 26, joined by other seasonal items like a Pecan Cortado, Italian Sausage Egg Bites, and a new dairy-free Maple Pecan Latte creamer.
